Fit Meals Monday- No I’m Not A Vegetarian Yet Edition

Now to my favorite part, the food! This week we are doing a lot more vegetarian meals.  No I am not becoming a vegetarian, or a vegan, nor are we going to eat all raw.  I’ve just had a taste lately for veggies.  And I’ve watched some films over the last year that make me think that more veggies and much less meat is the best way to go.

One of the films that I highly recommend that you watch is called Food Inc.  If you have Netflix you can watch it instantly!  Here’s a link to a short video that talks about the movie.  Another movie that I saw recently was called Forks Over Knives.  It’s another great one that’s making me re-think the amount of meat my family consumes.  Here’s a link to a post I wrote that has the video trailer of the movie in it.

I don’t want to have a meat debate here, but I do know one thing, our S.A.D diet in America (Standard American Diet)  has been slowly killing us.  I believe it’s time for ALL of us Fit Moms to rethink what we are putting into our bodies, and our kids bodies.  Check out those films on Netflix or get the dvd’s and let me know what you think.

Speaking of eating more veggies.  This week I’ll be trying some new recipes.  Eggplant Parmesan in the slow cooker for one!  I found a blog called “A Busy Moms Slow Cooker Adventures” and found an eggplant parmesan recipe that sounds good and easy.  She has a Slow Cooking Through The Holidays theme going on right now, which I think is EXCELLENT!  A great way to not stress out.  Just make sure you check the ingredients and always think about how you can make things more healthy if they aren’t already.  Her traditional Turkey Breast in the slow cooker looks GREAT!  Check out the site if you need great slow cooking ideas to help you de-stress.  :)

Fit Meals Monday


Today’s post will be short and sweet. I’m getting my post ready for Wednesday which will be our blogoversary! I’m planning a big giveaway, so I’m keeping today short so I can take the pictures, and get the post ready for you. Make sure you tell your friends to stop by the site and enter for a chance to win.

I just wanted to share with you a couple of cute photos from Father’s Day. Since our budget is extremely tight we wanted to do something that would bless my hubby, and be a gift that could keep on giving. The kids decided on washing his car! They did an excellent job detailing it. We bought all the supplies, including a hand vac (we figured it would be useful in the house too). The kids made him a sweet card, and promised to wash his car once a quarter. We gave him the bucket with all the supplies as a gift so that he can wash his own car, whenever he needs too. He loved it!

I tell you, it really doesn’t get any better than that.  I LOVE my family!  I cannot think of any other people I’d rather spend my life with than my husband and two children.  :)

Thursday-  Raisin Red Cabbage and Apples, Ginger Sesame Grilled Tofu

Friday-  Mushroom Risotto

Saturday- Leftovers

Sunday- Date Night!!! Whoo hoo!

Fit Meals Monday


Happy Monday Fit MOMS!

On Monday I usually give you a glimpse into my life.  My ups and downs, the cool things, the funny or embarrassing things, I tell you about times “my life is messy” (like our awesome blogger Lori blogged about a couple of weeks ago perfectly).  Last week was good.  For the most part I stuck to my eating plan.  I have to admit though I had chili cheese fries on Friday.  I had been craving them for about 2 months, and I finally caved in!  I went to get my hair braided (a 5 hour ordeal), and I went to the “hood” to get them done where they have some of the most tasty foods that’s 100% bad for you.  I admit it, I drove through one of my childhood favorite grease pits and picked up an order of chili cheese fries. Did it satisfy me?  Yep.  For hours!  Did I feel a little sick to the stomach.  Yep! For a few hours.  Will I do it again anytime soon?  NOPE!  That was enough for me.  I’m back on track.  My craving was satisfied, and I’m back to eating clean.

This week is going to be very exciting for our family.  My son won our family a trip to Disney World!!!!! That’s right, an all expense paid trip to Disney World.  Airfare, hotel, food, and park admission to all the parks, FREE!!!!  How did he do it?  First of all I must say it was a God thing.  On December 1st, the morning of the contest entry deadline I stumbled upon the contest rules for the Disney Magic of Healthy Living contest at 9am PST It said that any child 8-14 could enter and that they had to write a 250 word essay about health and fitness.  My son wrote his, and submitted it online  before the 12 noon deadline (thankfully we homeschool so we just switched up our schedule so he could write his essay).  About 2 weeks later we found out that he was a winner!

The cool thing about him winning is that the Disney people didn’t know who I was. He won 100% on his own merrit.  You could only type your first name on the essay and your age.  They didn’t know his mom was an Olympian, a pro athlete, or the founder of Fit Moms Fit Kids Club, they just awarded him for writing a great essay on how he inspires his friends to be fit!  We feel blessed to have won in the final hours of the contest!  My son wrote a single draft and edited it down to 250 words in a little over an hour.  He’s 9!  This Thursday our family will be getting on a plane and joining 50 other families who also won for a fun filled weekend.  They are going to have celebrity chefs, pro athletes, business professionals, and other “surprise guests” to teach the winners more about healthy living. They are also planning all sorts of fun activities for the kids, we can’t wait!  Here’s a link to the contest info page featuring Michelle Obama, and Disney Channel stars! Here’s My Meal Plan For The Week!

Monday- Baked Chicken, Baked Beans, Caesar Salad, healthy Mac and Cheese   

Tuesday- Leftovers made into Chicken Caesar Wraps

Wednesday-  Meatless 3 bean Chili  Since we didn’t have meatless Monday this week we’ll eat meatless on Wednesday.  I’ll throw in kidney, white, and black beans into a pot with diced tomatoes and any other veggies in left in my fridge.  I’ll season with my own chili seasoning blend.

Thursday- Monday???? We’ll be off to Disney World!!  They will be giving us a meal card to pay for all of our meals!  So, we’ll be eating FREE at Disney restaurants.  Now, since we won the Magic of Healthy Living Contest I will try and track what healthy meals that this card will get us at the restaurants we choose to eat at.  And report that when we get back.

Fit Meals Monday


Happy Monday!

If you are new to our site I’d like to welcome you.  I’m so glad you stopped by!  Fit Moms Fit Kids Club is a place for all moms no matter your current age, shape, or size.  A good place to start to find out all about our blog team, the topics covered here, and our philosophy start here.  To find out a little more about me, the founder of Fit Moms Fit Kids Club you can go to the about page.

On Mondays I usually tell you a little bit about the past week, and also what’s new and coming down the pipe line for FMFKC.  Last week was another great week as far as field trips go.  We got to visit the La Brea Tar Pits in Los Angeles.  It was homeschool day which meant it was FREE!  We got a free 1 1/2 hour tour around the pits and saw thousands of fossils.  The best part was getting to watch volunteers and staff members use their tools and patience to uncover the fossils in the “fish bowl”.  The “fish bowl” is a room with a glass window going 180 degrees around it so that we can watch as they uncover history. That was a good day.  But, my week was not perfect.  My little one had a fever for 5 days!  Diagnosis.  Ear infection and sinus infections.  :(

OH!  I almost forgot.  Last week I told you that I was going to try and keep my grocery bill to under $50!  I did it!!  I believe it was right around $50.  How did I do this in Southern California???  I used things I already had in my pantry and my freezer!  I put together a meal plan based on what I already had and just added some fresh ingredients to it.  This week I don’t have as much, so I’m going to shoot for $80.  I’ll let you know how that goes.  In April I want to have a grocery bill challenge to see if I can keep my grocery bill to a certain amount a week for a month.  I just need to decide what that amount should be.

Here’s My Meal Plan For The Week!

Meatless Monday- Hoppin Johns (an African American dish usually served on New Years Day, thought to bring good luck) served with Sauteed Collard Greens (usually African Americans like to cook their greens to death, literally cooking most of the goodness out of them.  I started sauteing mine last year.  My kids actually like them better!)  We didn’t get to this last week, so we’ll have it Monday.

Taco Tuesday- Healthy Taco Bake Casserole (try to use fresh ingredients) I know the picture looks so “bad” check out the recipe, it really isn’t!  Let me know if you try it!

Short Cut Wednesday- Roasted Chicken, Mixed Veggies, Green Salad  (I will buy an already roasted chicken on sale)

Thursday- Healthy Stuffed Red Bell Peppers

Fish Friday- Eathing Well Tilapia Corn Chowder (I found tilapia on sale for $2.99 a pound this week!  Whoo hoo!)

Simple Saturday- Chicken Vegetable Soup (use left over chicken,  left over veggies in fridge, and any leftover rice…throw in pot with diced tomatoes)

Sabbath Sunday- Leftovers

FYI I’ve been doing GREAT making my own whole wheat bread about 2 times a week.  I haven’t bought any sandwich bread since I made my how to make honey whole wheat bread video.  Saving tons of $$$!!

I’m looking for new recipes for my bread machine.  Any suggestions??
