I’m Back…Fit Meals Monday

Hi Fit Moms!

I am finally back!  As some of you know I took a two week vacation from the site to get some things taken care of.  I had an unbelievable schedule.  My pro beach volleyball season is now over so that’s one big thing off of my plate.  I was traveling back and forth from the west coast to east coast weekend after weekend, spending only a few days at home with the family so I had to release something before I had a nervous breakdown. :)

Miami Volleyball Tournament Sunset

Two weeks ago I was given the opportunity to speak at our church’s young adult ministry about marriage with my husband!  The title of the talk was Covenant Keepers.   This was a great experience, we had a blast doing it together.  If you are single or married we tell some of the good, bad, and ugly times in our lives, and we share some biblical marriage tips.  So, check it out!  Let me know if you do.   Click here for the link for the video. If you want the audio version that you can download for free of course click here.    This weekend I was asked to speak at our church’s first young women’s conference for 18-30 year olds, called Arise.  I was not the main speaker, but a breakout workshop speaker.  I taught “How to Study the Bible” three times.  It was a blessing to me to be able to share what I’ve learned over the years with these eager to learn ladies.  I remember when I was in their shoes not knowing Genesis from Revelations.  I still appreciate the help of older women pouring their lives into mine, it is so important, so needed.

Last week I took the entire week off from doing any physical exercise.  I was “detoxing” from my season.  I just wanted to do absolutely nothing physically.  This week I’m going to get on track and start working out again in my “home gym” which consists of an elliptical machine, weights, strength bands, yoga mats, a machine that vibrates you while you do exercises (I forget the name),  trx bands, and videos (like P90-x and yoga videos).  This year I’m adding something new, kettle bells!!!  I’m so excited about the kettle bells.  I only have a couple but I’m hoping to get some more soon.  Any sponsors or reps out there who want me to try theirs, please contact me.  :)

What’s On Our Menu?

This week is shop from my pantry, freezer and fridge week.  My goal is to spend less than $30 on items to complete these meals, including breakfast & lunch items.  I’m making my own bread this week so I won’t need to buy any, and I already have all the supplies to make it.  I plan on having smoothies and sandwiches this week for lunch.  Breakfast will rotate between cereal, oatmeal, egg scrambled with veggies inside & toast, and pancakes with turkey bacon one day for a treat.

Meatless Monday- Black and White Vegetarian Chili  served with Cornbread

Tuesday- Chicken Veggie Wild Rice Casserole

Wednesday- Sloppy Joes with fruit salad

Thursday- Hoppin’ John’s (a black eyed peas dish)

Friday- Tilapia Corn Chowder

Saturday- Camping with Cub Scouts!

Sunday- Leftover Buffet :)

Tell us in the comments below one meal you are making this week that you are excited about!

Magnificent Portobello Mushroom Burger

Sometimes when things are good you just have to brag.  I try to stay humble 99.9% of the time, but today I just can’t.  Last night I made the most magnificent portobello mushroom burger ever!  I heard yums, and smacking with every bite from my entire family (yep kids included).  When I make something as good as this I’ve got to share. The best part was this meal was completely meatless.  If you’ve been wanting to try a “Meatless Monday” this is one recipe you’ve got to try!  The portobello mushroom is so yummy and “meaty” that you won’t even miss the beef!

Annett’s Magnificent Portobello Mushroom Burger

2 packages of pre-sliced portobello mushrooms caps

(or 4 large portobello mushroom caps cleaned with stems removed)

1 tablespoon Grapeseed Oil (or oil of your choice)

4-6 cloves of garlic chopped

1 red onion sliced

1 avocado

2 medium tomatoes sliced

1 tbs non or low fat mayo

4 whole wheat buns

slices of mozzarella cheese

Balsamic Vinegar

sea salt or other seasonings (optional)

In a plastic bag place the cleaned sliced mushrooms and garlic.  Generously shake balsamic vinegar into bag until mushrooms are well coated, but not soaked! Just add enough to coat. Shake bag around to ensure both sides of mushrooms are coated with the balsamic vinegar.  Let bag sit for 15 minutes to let mushrooms marinate.  While mushrooms marinate prepare your toppings.  Heat oil in a frying pan on medium high heat (I used a griddle to make more at once).  Cook red onions until they are softened, about 3 minutes and then remove from heat.

In a bowl take the avocado insides (minus the seed) and put it in a bowl.  Add the mayo to the bowl and stir until well combined.  This is your spread for the bread.  You can season it with cajun seasonings if you like spice.

After mushrooms have marinated for 15 minutes, pour out contents of plastic bag in frying pan and cook until mushrooms have softened (about 5-7 minutes).  Make sure you turn them a few times to cook both sides thoroughly.  Sprinkle with salt or other seasonings of your choice (optional).   After the mushrooms have cooked add slices of mozzarella cheese on top and let melt.

Now it’s time to build your burger!  If you like you can toast your buns.  Spread the avocado spread on the top and bottom bun on the inside.  Load up your bun with mushrooms, and top with the onions and tomatoes.  Enjoy!

***You can also make this delicious meal on the grill!  Instead of using sliced mushrooms, use a cleaned out mushroom cap and follow the rest of the directions (grilling the onions and mushrooms).  It makes a great healthy camping meal!  You can take your mushrooms pre-packed in the garlic/balsamic vinegar plastic bag in your cooler.

Stefanie’s Super Shrimp Spinach Bowl

This week I am in beautiful Baltimore, Maryland.  Wow I LOVE this place!  I’m staying in a super cool part of the city called Fell’s Point.  It’s very hip and yet quaint at the same time.  The road is made out of old cobblestones and it’s right on the water.  Just beautiful!  I’m here for the inaugral NVL (National Volleyball League) tournament.  I was extremely blessed to get to stay with a wonderful woman by the name of Stefanie.  She was generous enough to offer my partner for the weekend Lisa and I a place to stay for the week.  Not only did she give us an incredibly cute place to stay, she also cooked for us!  One quick, easy, and healthy meal that Stefanie made for us was an amazing Shrimp Spinach Bowl.  Since she made it up I decided to name it after Stef.  Here’s to you Stepfanie!  I hope you Fit Moms love this as much as I did!

Stefanie’s Super Shrimp Spinach Bowl

(serves 4)

8 cups of spinach

20-30  medium shrimp (peeled, cleaned, deveined)

5 cloves of garlic diced (yes we LOVE garlic)

2 cups of cooked brown rice

1/2 to 1 tbsp Chinese black bean sauce

In a large pot saute garlic for 1 minute on medium heat. Add shrimp until almost cooked.   Stir in black bean sauce.  Add spinach and a little water.  Saute until spinach is wilted.

Place 1/2 cup of cooked brown rice in each serving bowl and top with the shrimp and spinach mix.  Stir to mix the ingredients.  Enjoy!

*Chinese black bean sauce is extremely HIGH in sodium.  Drink a ton of water if you are going to eat this.  Also, if you are on a low sodium diet this is NOT for you!  If you are on a low sodium diet you can still enjoy a shrimp and spinach bowl, just add other things like ginger or cajun seasonings for a different twist with less sodium.

Strawberry Shortcake Recipe And Giveaway-contest ended

When I was growing up I used to LOVE Strawberry Shortcake!  Not just the dessert,  but the character.  I used to have purses and clothes with Strawberry Shortcake on them.  In my house today it’s not much different than when I was a little girl.  My 5 year old daughter Victoria also LOVES Strawberry Shortcake.  She has videos, bags, and clothes with the beloved character.

Each month a cool company called Kidtoons sponsors a children’s movie in a local theater near you.  These short and fun adventures will let your little one see their favorite characters on the big screen.  On their site they have coloring pages, movie reviews, and talking points to discuss with your kids about the movie.  If you sign up for their birthday club, you can get a FREE ticket to one of their films for your birthday!

This month Kidtoons is featuring The Strawberry Shortcake Movie: Sky’s the Limit.
“When a heavy storm plunks an even heavier boulder into a nearby stream, it stops the flow of water into Berry Bitty City!  So, with help from long-winded Mr. Longface, the girls set out to find the legendary “geyser rock,” which creates water from the ground!  Their journey is rocky, and the story about the rock may not be very solid.  But with teamwork, a careful plan and lots of girl power, the friends just might get their creativity – and water – flowing again!”

Thanks to Kidtoons…
