Fit Meals Monday

It’s amazing how fast Christmas is approaching.  Every day it gets nearer I get a little more stressed. I’m thankful though that we finally didn’t have a swim meet to attend so that I could get some things done. Of course not everything I had planned, but the Christmas tree is up, and zillions of cookies were baked for 2 cookie swap parties.

People usually make excuses this time a year about why they can’t exercise, or get fit.  I think it’s time to lose the excuses and start following a plan.  Speaking of plans. Here’s my dinner meal plan for the week. I’m planning on keeping the holiday pounds off this year. What about you??? Fit Meals Monday

Monday: Chinese Chicken Salad

Tuesday:  Garlic White Beans and Greens (red kale and spinach)

Wednesday:  Portabello Mushroom Burger

Thursday: Chicken Caesar Salad

Friday:  Salmon Patties, Potatoes, Corn, Green Salad

Saturday:  Tomato Soup and Faux Grilled Cheese with Apple Sandwich

Sunday: Out to eat with my little Gum Drop from The Nutcracker


My breakfasts this week will consist of eggs and whole wheat toast, Shakeology, fresh veggie juice, or oatmeal.

Lunch this week will be either, Shakeology, sandwich, hummus veggie wrap, or tuna salad.

I’ll rotate the breakfast/lunch meals.

Fit Meals Monday

Here’s the skinny on our dinner menu for the week!

I used the Shop The Pantry/Freezer, the Shopping the Sales Paper, and Theme Night methods from my Meal Planning 101 series to make the following meal plan. Check out the series!  I looked through my freezer and pantry to make my meal plan, which saved me tons of extra money this week. I just had to add some fresh veggies from the sales paper, and added some milk and eggs to my list and that’s it!

Meatless Monday- White Beans and Greens, Whole Foods Cole Slaw

Taco Tuesday- Steak Fajitas

Easy Wednesday- Low fat Beef Stroganoff

Grill Thursday- Grilled Chicken, Baked Beans, Mixed Green Salad with veggies

Fish Friday- Salmon Patties, Roasted Coconut Sweet Potatoes, salad

Simple Saturday- leftover buffet :)

Sunday- My sweet Victoria’s 7th birthday Under the Sea Tea Party… I’ll share pictures next week. :) or check out my Pinterest page for a sneak peak of cute things I’ve pinned!

Meal Planning 101: theme nights

Hi Fit Moms! I hope you’ve been enjoying the posts about Meal Planning! Have they been helping??

Today I’d like to teach you another way that I meal plan.  It’s another one of my favorite ways and it’s super simple!

I make healthy meal plans by planning theme nights. Having a different theme on different nights makes meal planning a cinch.  All you have to do is switch up different recipes on those theme nights.

How To Make A Theme Night Meal Plan

All you have to do to make a theme night meal plan is to first think of a list of themes.  Your themes can be as simple or creative as you please.  For instance, you themes can come from types of meals such as Mexican, Italian, Chinese.  Or, you can choose themes like dinner for breakfast, or soup and salad day.  Your theme could be a type of meal like vegan or vegetarian, raw food day, or meatless Monday.  You can have a pizza day, or Fun Friday which could include something like homemade pretzels for snacks.  There are fun cookbooks for kids that help them get involved and learn about different countries and states. Maybe you can pick a meal from different regions of the USA and cook those types of meals for the week, while learning about the people and traditions there. Or, pick a country in the world and make meals from that country that week, maybe even dressing up one day.

Another great theme night is Kids Help Cook night. On these nights your kids will help chose and prepare a meal with you.  I suggest getting a kids cookbook and letting them pick one meal each week to add to your meal plan. If they chose they are more likely to eat it! Preparing a meal together will help you bond, and give them lifelong memories.

Example Of A Theme Night Meal Plan

Meatless Monday- these are vegetarian, vegan, even raw meals giving your body a break from meat.

Taco Tuesday- make taco inspired meals.  One week can be fish tacos, another week chicken, beef, pork, shrimp, or even nut meat vegan tacos served in a lettuce “tortilla.” I just gave you 6 different weeks of taco meals! Easy huh??

Wacky Wednesday- meals that are fun like “brinner” (breakfast for dinner).  Have waffles and oven fried chicken, or pancakes and turkey sausage dinner!   Kids Choice Wednesday is another fun option, where your kids get to pick the meal.

Slow Cooker Thursday- meals made in the slow cooker, check out CrockPot365 for inspiration. This woman cooked in her slow cooker for a year!!! She shares the good, bad, and ugly with us.

Fish Friday- a meal with some type of fish. Or, Fun Friday where you make something fun like homemade pizza, sushi, or have a baked potato bar.

Soup and Sandwich Saturday- this will make your weekend easy, serve sandwiches and soup!

Leftover Buffet Sunday- a meal that consists of the weeks leftovers. Or, Super Sunday where you make a fancy meal that takes more preparation. Like old school Sunday dinners at grandma’s (but keep it healthy). :)

Meal Planning 101: shopping the sales papers

Before I begin, I’d like to share some news! I’m excited to announce that we will be starting a Friday series called “Figure Friendly Comfort Foods”. Now that fall is here, I’m craving every pumpkin dish, creamy soups, and any type of pie. The one thing I don’t want to do is pack on the pounds so I’m starting this series and I’d LOVE for you to join me! Last week I started a series dedicated to different ways to meal plan, called Meal Planning 101.  If you missed the first two posts here are links to… “Meal Planning 101: how to make a weekly meal plan” and “Meal Planning 101: family favorites.” Today I will continue the series with another way that I make a meal plan.

We all know that times are tough.  The economy is just not what it used to be a few years ago.  Suddenly, a lot of us find ourselves pinching pennies.  Shopping the sales paper is one of my favorite ways to not only save money, but make a great meal plan.

Here’s how I do it. I look online for the local ads of my favorite grocery stores.  I write down my favorite fresh veggie and fruit items.  Then I look at the meat items and I start paring veggies with the meat to make a meal. Of course I also plan meatless meals because we are cutting back on meat in our house.

Here’s an example of how to shop the sales paper.  This week chicken was on sale for $1.67 per pound.  Tomatoes for 59 cents a pound.  Zucchini was 3 lbs for $1.  Lean ground beef $2.79 per pound.  My favorite Fuju apples were nicely priced at 69 cents a pound.  Baby okra, frozen, was $1.59 per bag.  Plain non fat yogurt was $1.79 each.  Extra large cans of black beans are $1.99.  A pound of strawberries are 99 cents. Avocados are 2 for $1!

Here’s what I just thought up off the top of my head to make with these ingredients.

Sample Weekly Meal Plan

Monday- Succotash (okra, corn, tomatoes) with cornbread

Tuesday- Stuffed zucchini boats (stuffed with lean ground beef and quinoa and use the cleaned out zucchini and tomatoes as well) served with an avocado black bean tomato salad

Wednesday- Moussaka, a Greek dish using the yogurt and lean ground beef

Thursday- Black bean chili (using the beans, tomatoes, lean ground beef, strain yogurt to add on top like a dollap of sour cream)

Friday- Zucchini, tomatoes, basil from my garden served over whole wheat pasta

Saturday- Homemade BRC Burritos (use the tomatoes to make salsa, black beans, and ground beef, brown rice in my pantry)

Sunday- BBQ chicken served with BBQ black beans, quinoa, and baked apples for dessert
