Fit Meals Monday

Hello Fit Moms!

Hopefully last week was a great week for you.  I had to get back into the swing of things after arriving back from Mississippi by car last Monday.  I didn’t realize how tired I’d be from sitting in the car 2 1/2 days!  Trying to get homeschool going again after the vacation and funeral were tough.  This week I feel like I’m at 100% and I’m ready to do things right.

It’s going to be an exciting week for the kids.  We have 2 field trips planned.  One to Calico Ghost Town, which I’ve never gone to before.  And, the other one will be to see a live performance of The Nutcracker!  My little ballerina will love that one.  She was one month shy (age wise) of being able to perform in her dance school’s performance, so I thought I’d surprise her with this treat.

Finally on Friday afternoon, I will be making my first appearance at a local school under the banner of Ready, Set, Gold! which is a program that partners Olympians and schools together.  My job is to help inspire and encourage the kids in the area of health and fitness.  In the short term I’ll encourage them to help them get better scores on their fitness tests.  In the long run, my goal is to help them choose to live healthier lifestyles for the rest of their lives.

If you are in the mood to WIN something you are in the right place. We have a Pokemon Prize Pack Giveaway going on right NOW!  IT ends tonight!  Tell your friends.  Also, this week we’ll have a new giveaway released on Tuesday.  So, come back for your chance to win!  December is my favorite month of the year, and to celebrate we will be giving away a Christmas Gift EVERY WEEK!  So, tell your friends to come by Fit Moms Fit Kids Club for their chance to win!  Better yet, subscribe so you won’t anything!

In case you are new here, every Monday here at Fit Moms Fit Kids Club I post my families meal plan for the week so that you can get some ideas for eating healthy.  So here you go!  Enjoy!  Let me know if you try any of the recipes.  They all have links!

Sugar-Free Banana Bread, It Ain’t Hot Chocolate

I survived my 2 months of sugar-free living. Maybe next month I will blog more about that. But in the meantime, I have a Sugar-Free Banana Bread recipe for you that I found and made several times during my sugarless life. I adapted it from this recipe at Food.com. It has the same consistency and texture as banana bread, but not as sweet. If I were not doing the sugar-free thing I don’t know how much I would have liked it, but for a sugar free item, it is pretty good. And my son loved it.If you are trying to cut out or reduce refined sugar in your life, give this a whirl.

Sugar-Free Banana Bread

2 cups whole wheat flour or white flour

2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
4 medium, ripe bananas
1/2 cup apple sauce
1 egg
1/3 cup vegetable oil
1/2 cup unsweetened orange juice
You can add some other junk like nuts, cranberries or raisins, but I am not into those so I don’t. If you are not on a specific sugar-free thing you can add chocolate chips because those make everything taste better.

1. Preheat oven to 350 degrees
2. Combine flour, oats, baking soda, baking powder, cinnamon in a bowl.
3. Blend the bananas in some sort of kitchen gadget that can puree them.
(I used my blender. Don’t be deceived by the fact that it looks like a nice, fancy, blender. It does not work well and I don’t recommend it at all.)
4. Combine pureed bananas, apple sauce, egg, vegetable oil and OJ in another bowl.
5. Add the junk from bowl #1 to the junk in bowl #2 and mix.
4. Pour all the junk into a greased loaf pan.
5. Bake for 40-50 minutes.
6. Cool on wire rack.
I added butter even though I’m a Fit Mom. And I feel totally okay with it.

Daddy Does It RAW: Week 1 Quick Meal Plan

Hey there my friends,

It’s Byron… Annett’s husband.  AKA “Spicy Brown!”  I have hi-jacked the blog today while Annett is away training (Hee hee).  Back by popular demand, we are going to do two weeks of eating RAW, and I would love for you to join us.  I have hi-jacked the kitchen too, so you gotta do what I say! 😉

Below is this weeks’ simple 5 day meal plan.  There are only 5 meals.  You can mix and match to use for both lunch and dinner all of this week.  Or you can just do lunch or dinner.  It’s totally up to you.  I don’t want to make it too extreme, but let’s have some fun with it.  Try the meals, and share your comments in the comments area.  If you have RAW recipes that you’d like to share please do.

Our family will be doing this for a least two weeks.  I will also be experimenting with some breakfast smoothies that are simple, fast and full of flavor but low in sugar (I will share the best of the bunch on Friday… so stay tuned).

OK… enough of me talking (I think I hear Annett coming through the door).

Bon appetit!

grated cabbage (to liking)
hand full of raisins  (cut up apple cubes)
hand full of sunflower seeds

½ of soaked walnut (30 minutes)
½ of shredded or chopped carrots
3 inches of a leek (or diced cabbage)
2 teaspoons of nama shoyu (like soy sauce)
Taco spice

Food process the nuts together (you may need to add a little more water).
Then, take out the nuts and food process the carrots and leeks separately.
Toss the nuts and vegetables together in a bowl.  Season mixture with the taco spice to taste.

Fold into lettuce leaves

Day 5
Daddy Likes it RAW Lasagna

1 or 2 avocados (sliced)
Sliced mushrooms

6 tablespoons (1/2 cup) of marinara sauce

Marinate mushrooms in olive oil and tamari (10 minutes).
Food process your cashews, and favorite spice and garlic to taste (this will be your ricotta cheese substitute).
Slice the zucchini into long thin noodle shapes
Food process the spinach (add a little water as needed).  Pulse it until it becomes a sauce.  Put your spinach sauce into a bowl.
Cover the bottom of a baking dish with a tablespoon of marinara sauce. Then lay the zucchini slices in a row on top of the marinara sauce.
Add a layer of marinara sauce, and mushrooms on top, followed by another layer of zucchini.  Then add a layer of your cashew cheese, followed by another layer of your zucchini.

Fit Meals Monday

Today’s post will be short and sweet. I’m getting my post ready for Wednesday which will be our blogoversary! I’m planning a big giveaway, so I’m keeping today short so I can take the pictures, and get the post ready for you. Make sure you tell your friends to stop by the site and enter for a chance to win.

I just wanted to share with you a couple of cute photos from Father’s Day. Since our budget is extremely tight we wanted to do something that would bless my hubby, and be a gift that could keep on giving. The kids decided on washing his car! They did an excellent job detailing it. We bought all the supplies, including a hand vac (we figured it would be useful in the house too). The kids made him a sweet card, and promised to wash his car once a quarter. We gave him the bucket with all the supplies as a gift so that he can wash his own car, whenever he needs too. He loved it!
