I kept hearing about it and finally decided to give it a try.
It reminds me of eating fresh baked oatmeal cookies. I eat mine with a tall glass of milk.

Here’s my new recipe. Give it a try.
Healthy Kid Approved Baked Oatmeal
3 cups uncooked oats
1/3 cup brown sugar
2 teaspoons baking powder
1 teaspoon salt
2 teaspoon cinnamon
2 teaspoon vanilla extract
1 cup low fat milk (you can probably substitute soy or other alternatives)
1 tablespoon canola oil or melted butter
1/2 cup unsweetened applesauce
4 egg whites (or 2 whole eggs)
¾ cup of fruit (blueberries, strawberries, peaches, apples your choice)
Directions
Preheat oven to 350 degrees. In a large bowl stir together oats, sugar, baking powder, salt, and cinnamon. Mix in vanilla, milk, oil or butter, applesauce, and eggs. Stir until well combined. Pour your fruit of choice onto the bottom of a 9×13 inch baking dish. Spread oatmeal mixture over the fruit. Bake at 350 degrees for 30-40 minutes.

Happy Monday! I hope you had a great week last week. We had a fantastic week! I got back out on the beach trying to get in shape for my 2011 pro beach volleyball season. It’s always extremely humbling to get back in the sand. I always feel like I’m jumping 2 inches high and running as slow as a snail. But, I always remind myself it’s only going to get easier. I’ll be faster, stronger, and jumping high again in no time. Well, I hope. LOL. I forgot for a minute that I’m now 37, and in my 13th season playing professionally. Whew, that’s a long time! I never imagined I’d be playing this long. But, we are still one of the top teams and doing great!
Besides training we had a great time homeschooling this week. My son got to go on a 6 hour educational hike and team building workshop. He had a blast! We also visited the Quality West Wing. The kids learned about our government. They have an almost to scale replica of the Oval Office. My son learned so much and had a ton of fun doing a half hour scavenger hunt trying to answer questions about Presidents, the Constitution, etc… He also got to spend time pretending he was the President of the United States. The icing on the cake was that on Saturday it snowed a tiny bit again at my Southern California home (and I don’t live in the mountains). This is only the second time in my lifetime that it’s snowed where I live, and both times happened this year! Amazing.
I’m not sure if you’ve noticed, but this week we are doing something new! I took off my regular Fit Meals Monday meal plan blog hop because of low participation and decided to join Menu Plan Monday at Org Junkie. She has a lot of great info to help you organize your home. Here’s My Meal Plan For The Week!
I’m shopping from my pantry and freezer this week! Trying to be frugal! I’ll shop mostly for fresh veggies and fruit. Hoping to keep my grocery bill to $50 or less! I’ll let you know if I make it under budget. FYI all of the meals have links to the recipes I’ll be using (well sort of, I always modify).
Wednesday- Hoppin Johns (an African American dish usually served on New Years Day, thought to bring good luck) served with Sauteed Collard Greens (usually African Americans like to cook their greens to death, literally cooking most of the goodness out of them. I started sauteing mine last year. My kids actually like them better!)
Thursday- Chipotle! We will use the Facebook buy one get one free offer that I told you about last week to buy their organic chicken bowls. We order our bowls with chicken, very little rice, black and pinto beans, fajita veggies, corn salsa, pico de gallo, and a very little cheese. We split our bowls between the 4 of us. This week with the coupon it will only cost us $5.85 (plus tax)!!!
Fish Friday- Shrimp Lettuce Wraps (Ok well not fish, but they do live in the water, does that count?) If you press the link you can show your kids the kids cooking show that shows how to make these. My 9 year old son, and 5 year old daughter joined 9 & 7 year old kid chefs to make this delicious meal!!!
3 oz cooked (sliced or cubed) chicken breast
3 cups romaine lettuce torn to bite size pieces
¼ cup cubed avocados
2 tbsp fat free Caesar salad dressing (or make your own)
1 medium apple
Directions: Toss all of the ingredients in a large bowl (except
apple). Serve with apple.
I don’t know if I told you ladies, but the funniest thing happened when I did my Once A Month Cooking Day a couple of weeks ago. I injured my elbow!! Yep, you read that right. Me, the Olympian, the Pro Beach Volleyball Player, I hurt my elbow COOKING! The funny thing is, the only real injury I had last year was also a cooking injury. I had a bruised left heel from cooking too much over the holidays! LOL! I am NOT lying. I tend to put all of my weight on one foot when I cook. I cooked for hours and hours on a tile floor with no shoes, and no soft padded rugs, hence a bruised heel! Well in all fairness, I developed tendonitis in my right elbow sometime during my season last year. It was feeling great until I did a circuit workout. A couple of days after that I did the once a month cooking day. The day after that my elbow was swollen and in a brace! But, I’m not complaining. I had 24 meals in the freezer! It’s still bothering me a little, but hopefully it’ll be fine before I start training in the sand in a couple of weeks.
One neat thing that happened last week was my 5 year old daughter finally, sort of learned all of the books of the New Testament. It was so precious and hilarious all at the same time. Check out this short video clip. By the way, did you know there were several NEW books of the New Testament, including the book of Truth, 1,2, & 3 Tom, Daphesians, plus a few more!!! Check it out! (FYI she’s in a robe and has a towel on her head because she was Miriam at her bible club, Moses’ sister. She chose Miriam because she can sing she said). OH, and yes the video is sideways, I know. That kinda of makes it even funnier, I must of had my cell phone camera the wrong way!
I wanted to mention that our meal plan last week was fantastic!!! The broccoli cauliflower bake was my kids favorite! My husband who doesn’t even like cauliflower loved it! He said it tasted like lasagna and he didn’t even miss the pasta or meat! The other fam favorite was of course food blogger Kasey Lopez’s Healthy Mexican Pizza’s!
On Saturday we did something I’ve wanted to do for about 2 years. We set up a composting machine in our back yard (video coming soon)! The kids helped and we read and learned all about composting. My daughter decided that she had a taste for BBQ, and in Southern California where I live it was a beautiful sunny day. So, I went to the store, grabbed some meat that was on sale, and we had an impromptu BBQ. Leftovers were eaten on Sunday.

Meatless Monday- Broccoli and Cheese Twice Baked Potatoes (slimmed down)
Tuesday- Spaghetti Squash something?? Any ideas?? They are on sale. I’ve never had them. But I’d love to try them.
Thursday- Red Bell Pepper Avocado Salad, greens, and Oven Country Steak which was from my once a month cooking day.
Friday- Brinner. That’s Breakfast for Dinner. Blueberry whole-grain waffles and turkey bacon.
Saturday- Since I will NOT be cooking on Super Bowl Sunday, and I LOVE to cook on holidays, and special event days like this, I will cook my Super Bowl inspired meal on Saturday instead. We’ll have a sliders bar. On the bar I’ll have whole wheat buns, grilled red onions, mushrooms, tomatoes, low fat cheeses (spicy and medium), and cranberries. Yep you read that right, cranberries. Have you ever had a cranberry blue cheese mushroom burger??? YUM! I’ll also make my famous guacamole, made with fresh ingredients.
Super Bowl Sunday- Lucky us, on Super Bowl Sunday we’ve been invited to a party. So, no cleaning or cooking for me. We get to relax and enjoy the game with great family friends. Go Steelers! (I really don’t have a favorite team, but my volleyball partners husband is the chaplain for the Steelers so I might as well cheer for them).
