Here’s the skinny on fats: your body needs fat to survive. Fat is a vital nutrient to good health.
So, when crafting your diet, be sure to include fats. Good fats.
What’s that, you say? No such thing as healthy animal fats.
Well, there is….there is such a thing as healthy animal fats. And those healthy fats are not found in conventional animal products.
Turns out that conventional animal fats — meat and dairy — are toxic storehouses.
Because organochlorines — the scientific name for pesticides and such — are water insoluble, and attracted to fats.
So, that means that whatever toxins I eat — whatever toxins animals eat — those organochlorines resist digestion, resist excretion, and are stored in fat cells, fat cells bloated with toxins and chemicals and pollutants and pharmaceuticals.
And then those organochlorines set up residence, and are interacting, interfering and, sometimes, even controlling, your endocrine system.
And this little gem: modern factory farming practices, which enable a farmer or rancher to raise more animals, more quickly, rely heavily on synthetic hormones, toxic chemicals and antibiotics…which are then ingested by you and me. Ah…nothing like trading your health so that the meat packing industry can increase its bottom line.
For these reasons, in switching to organics, you might prioritize your animal products . Look for meats that are free-range and raised without antibiotics, bonus points if the animals were raised on organic feed.
Plus, hey, guess what? Just so happens that when cows eat grass, as God intended, the beef is rich in Omega 3’s, conjugated linoleic acid, plus vitamins A and E. That is healthy eating.
Milk products would be next – switching, at the very least, to milk, cheese and butter with no growth hormone rBGH. Better yet, switch to organic milk products from cows which graze on grass. Some would suggest, however, the very best would be to drink and eat raw milk products from a safe and reliable source.

Ground Beef Tacos
– 1 pound ground beef
– 1 medium onion, diced
– 1 or 2 bell peppers, diced
– 5 or 6 cloves of garlic, minced
– 1 cup of salsa
– Celtic sea salt, to taste
– black pepper, to taste
– 2 tsp. dried oregano or za’atar
– 1 tsp. cumin
In a large skillet, over medium-high heat, brown ground beef with all veggies and spices, saving out the salsa. When meat is browned, and veggies are soft, add salsa, and bring to a boil. Then, reduce heat, and simmer until all the liquid is absorbed and/or evaporated.
Serve immediately with warm corn tortillas, grated cheese, shredded lettuce, chopped tomatoes, sour cream, and salsa.
Optional: While the beef is browning, add a cup of fresh, chopped tomatoes for extra flavor.
NOTE: It has been my experience that organic ground beef (80/20) does not render liquid fat when browning. That is, I have never had any fat to drain off the pan with this, or other, recipes.
