Fit Moms Weekly Meal Plan and Truth In The Tinsel

Hi Fit Moms-

The Christmas season is in full swing for our family.  What about you?  A week ago, we participated in our first cookie swap and craft party.  This weekend we went to see The Nutcracker Ballet.  We have a bunch of holiday activities coming our way this week as well. Starting with a Blogger Holiday Cookie Swap I’m participating in.   A bunch of bloggers, including me,  participated in the writing of a holiday cookie eCoobook.  We will all send a batch of our contributions to another blogger on December 12th!  It’s sort of like a Secret Santa.  We don’t know what blogger is sending us cookies.  :) Stay tuned for the eCookbook!

This week my kids and I will also be getting ready for our own Annual Cookie Swap.  What I love about our cookie swap is that the kids all bring money to donate to World Vision.  They look through the World Vision gift guide as a group. After we tally up how much money they raised,  they buy things like ducks, chickens, and goats for people who need a gift that keeps on giving.  It’s the highlight of their year!

Speaking of cute… I wanted to mention that my kids are having a BLAST doing the Truth in the Tinsel ebook!  They are learning the Christmas Story piece by piece, like a mystery.  Each day they get a little clue to what the day’s story will be.  After we read the scriptures they make their own Christmas ornaments!  The kids love making their own ornaments and putting them on their mini-trees.  The picture at the top of the post is their pregnant Mary and Elizabeth ornaments. Aren’t they cute!  You say you wish you could do this with your kids?  Well, you are NOT too late!  I LOVE the fact that they have abbreviated lesson plans for those who can’t do one every day, or for late comers.  You can join in anytime!  There’s still time to do Truth in the Tinsel with your kids this season.  Buy yours by clicking here!

Fit Meals Monday

Hello Fit Moms!

Hopefully last week was a great week for you.  I had to get back into the swing of things after arriving back from Mississippi by car last Monday.  I didn’t realize how tired I’d be from sitting in the car 2 1/2 days!  Trying to get homeschool going again after the vacation and funeral were tough.  This week I feel like I’m at 100% and I’m ready to do things right.

It’s going to be an exciting week for the kids.  We have 2 field trips planned.  One to Calico Ghost Town, which I’ve never gone to before.  And, the other one will be to see a live performance of The Nutcracker!  My little ballerina will love that one.  She was one month shy (age wise) of being able to perform in her dance school’s performance, so I thought I’d surprise her with this treat.

Finally on Friday afternoon, I will be making my first appearance at a local school under the banner of Ready, Set, Gold! which is a program that partners Olympians and schools together.  My job is to help inspire and encourage the kids in the area of health and fitness.  In the short term I’ll encourage them to help them get better scores on their fitness tests.  In the long run, my goal is to help them choose to live healthier lifestyles for the rest of their lives.

TuesdayQuinoa Chicken Brocolli Casserole

Wednesday-  BRC Burritos (black beans, baked brown spanish rice, and cheese)

Thursday- Black Bean and Corn Salad with avocados, Baked Brown Spanish Rice, Rotisserie Chicken

Friday- Slow Cooker Eggplant Parmesan (I will post recipe this week!)

Saturday- Tyler Florence’s Mexican Tortilla Chicken Soup (using leftover rotisserie chicken)

Sunday- Leftover Buffet!

Fit Meals Monday- No I’m Not A Vegetarian Yet Edition

Now to my favorite part, the food! This week we are doing a lot more vegetarian meals.  No I am not becoming a vegetarian, or a vegan, nor are we going to eat all raw.  I’ve just had a taste lately for veggies.  And I’ve watched some films over the last year that make me think that more veggies and much less meat is the best way to go.

One of the films that I highly recommend that you watch is called Food Inc.  If you have Netflix you can watch it instantly!  Here’s a link to a short video that talks about the movie.  Another movie that I saw recently was called Forks Over Knives.  It’s another great one that’s making me re-think the amount of meat my family consumes.  Here’s a link to a post I wrote that has the video trailer of the movie in it.

I don’t want to have a meat debate here, but I do know one thing, our S.A.D diet in America (Standard American Diet)  has been slowly killing us.  I believe it’s time for ALL of us Fit Moms to rethink what we are putting into our bodies, and our kids bodies.  Check out those films on Netflix or get the dvd’s and let me know what you think.

Speaking of eating more veggies.  This week I’ll be trying some new recipes.  Eggplant Parmesan in the slow cooker for one!  I found a blog called “A Busy Moms Slow Cooker Adventures” and found an eggplant parmesan recipe that sounds good and easy.  She has a Slow Cooking Through The Holidays theme going on right now, which I think is EXCELLENT!  A great way to not stress out.  Just make sure you check the ingredients and always think about how you can make things more healthy if they aren’t already.  Her traditional Turkey Breast in the slow cooker looks GREAT!  Check out the site if you need great slow cooking ideas to help you de-stress.  :)

Fit Meals Monday

Good Day Fit Moms!

I hope you had a great weekend, and are ready for a fabulous week!  I am.

My mind has been on overdrive thinking of ways to make Fit Moms Fit Kids Club better for you.  I’ve also been thinking of things I can do to improve my personal health and fitness.  A lot of you think I have it all together, but the truth is I have a LONG long way to go!  That’s the whole reason I started this blog, to learn about health and fitness myself, and help to teach you, with the help of my knowledgeable buddies along the way.

I’m getting excited for the fitness challenges we will begin in 2012, the webinars, more interviews, more cooking shows from myself and the kids cooking show.  We are going to have more contests, giveaways, and content to keep you motivated and give you some accountability as well.  I JUST CAN’T WAIT! :)

Until then, we’ll continue to plug away and today I’ll share with you as I always do, my family’s weekly meal plan.  Don’t worry if you aren’t reading this until Wednesday, just make out a shopping list, you can use our meal plan anytime!  You can even pick out a meal or two and try them with your family.

How did I come up with this week’s meal plan?  I looked in the sale paper, starting with what’s on sale that’s organic.  Then I check for other sale items at Sprouts Farmer’s Market.  Finally, I search the web for yummy healthy recipes with ingredients from my list and create my healthy inspired menu.

What’s On My Menu?

Meatless Monday- Quinoa Vegetarian Taco Salad

Tuesday- Zucchini Casserole Red Pepper Aoili

Wednesday- Dhat Island Restaurant!!!! I can’t wait!  This is my favorite restaurant ever! It’s my sister-in-law’s.  If you ever stop by check out the kids menu, they have a Victoria and Mya (my kids) favorite meals on the kids menu named after them.  :)   Don’t just take my word for it being good… they were the top ranked restaurant in the Inland Empire, in Ca!  It’s located in Redlands.  Enjoy!

Thursday- Broccoli Casserole (putting much less cheese in this though and I may add chicken)

Friday- Going to Six Flags Magic Mountain in the day for the holiday, and kids pizza party banquet for my sons flag football team.

Saturday- Healthy fish Tacos with homemade guacamole and homemade tortilla chips (I’ll share my from scratch guacamole recipe one day)

Sunday- Celebrating my little girls 6th Birthday…. Tea party at American Girl.  :)
