Olympic Fit Meals Monday

Hi Fit Moms Fit Kids Club Readers!!!

I know, I know, it’s been awhile since I’ve posted a Fit Meals Monday meal plan. Sorry about that. In honor of the Olympics, I’m calling this the Olympic Fit Meals Monday edition. No other reason. I hope you enjoyed my post about the opening ceremonies, called “What the? Thoughts on the Olympic Opening Ceremony From an Olympian.” If you haven’t checked it out, make sure you read it and leave a comment about what you thought about London’s Opening Ceremony.

Here’s what the Davis family will be having this week.

Hot Tip:

When I planned this meal plan I looked at our local sales papers and designed meals based off of what was on sale in the fresh food and organic food departments. For instance chicken, red bell peppers, broccoli, tomatoes, avocados, corn, apples, lettuce, berries and more are on sale this week.  So you’ll see a lot of fresh berries in my meal plan and veggies in the dishes.  A friend gave me some kale from her SIL’s garden, and I have some things from my garden to add as well, plus some meat for carne asada already in the freezer from a few weeks ago. I also had some leftover toppings for a Chinese Chicken Salad from this weekend so I’ll be making another salad with it Monday.  Because of all of this, my grocery bill should be extremely reasonable this week. :)

Just for you all, I’ll post my recipe for my veggie tuna salad this week! :) Feel free to print out this meal plan and use it as your own any time or just get ideas! Who couldn’t use some new ideas. Enjoy.

    I did not create a meal plan for this week, however I looked at the menu you posted, and we already made the corn and black bean salsa lettuce wraps, and they are amazing! We have a new, vegetarian dish we love….They are perfect for even a healthy small snack in the day for the kids…
