Colorful Butterfly Pepper Snacks

This month I thought I’d share a recipe with you to show you that eating healthy can be fun and nutritious!

This snack is to encourage kids to eat a protein and vegetable with every meal. Each snack provides one serving of protein and one serving of vegetables.


Colorful Butterfly Pepper Snacks


Ingredients:

1 green pepper

1 yellow pepper

1 orange pepper

1 red pepper

1 cucumber sliced (skin on)

cherry tomatoes

chives

1 tablespoon fat free ranch dressing

1/2 cup Fage 0% plain nonfat Greek style yogurt

Mealology Recipe: Wash & cut each pepper into 12 pieces. Mix yogurt and Ranch in a ziplock bag. Cut tip of bag to pipe dip onto plate.

Provide each person with one serving, which includes:

various colored peppers, chives, tomatoes, cucumber and a ziploc bag with the dip.

Try to make colorful butterflies out of the peppers, cucumbers, and tomatoes, using the chives as the antennas.

The girl above is one of my favorite students smiling with her healthy snack. This snack is used in my Children’s Fitness Foundation “Move with Us” program.   Now you can also enjoy preparing and eating this fun, healthy and nutritious snack with your child. Enjoy!
