Healthy Kid Approved Baked Oatmeal Recipe

Fit Meals With Annett Logo

I have a new favorite breakfast dish.

Baked Oatmeal!

I kept hearing about it and finally decided to give it a try.

It reminds me of eating fresh baked oatmeal cookies.  I eat mine with a tall glass of milk.

Yummy.  Milk and cookies. Healthy baked oatmeal and milk.

Here’s my new recipe.  Give it a try.

Healthy Kid Approved Baked Oatmeal

baked oatmean

3 cups uncooked oats

1/3 cup brown sugar

2 teaspoons baking powder

1 teaspoon salt

2 teaspoon cinnamon

2 teaspoon vanilla extract

1 cup low fat milk (you can probably substitute soy or other alternatives)

1 tablespoon canola oil or melted butter

1/2 cup unsweetened applesauce

4 egg whites (or 2 whole eggs)

¾ cup of fruit (blueberries, strawberries, peaches, apples your choice)

Directions

Preheat oven to 350 degrees.  In a large bowl stir together oats, sugar, baking powder, salt, and cinnamon.  Mix in vanilla, milk, oil or butter, applesauce, and eggs.  Stir until well combined.  Pour your fruit of choice onto the bottom of a 9×13 inch baking dish.  Spread oatmeal mixture over the fruit.  Bake at 350 degrees for 30-40 minutes.

Baked Blueberry Oatmeal

I used fresh blueberries in this photo

Enjoy!

As you see, we did. :)

I forgot to mention that you can probably substitute brown sugar for other sweeteners like agave, honey, or sucanat. Maybe even maple syrup drizzled on top instead of baked inside??? If you don’t want any sweetener and just your fresh fruit that’s probably fine too. No judgement here. :) I’ve only used brown sugar, so if you try something else let us know how that comes out. I LOVE to try new things!

Someone asked me yesterday how to make this more 40/30/30 friendly. I try to eat with the 40/30/30 balanced meal principles in mind myself whenever I eat. When I make regular oatmeal I put protein powder in it, and sprinkle with slivered almonds. Sometimes I mix cottage cheese into my oatmeal. Or, I eat it with turkey bacon or chicken sausage on the side. You can do the same thing with baked oatmeal. Another YUMMY option is to add peanut butter to it (natural is preferred, or make your own. Watch our Fit Meals By Kids Video to see how!) I hope this helps!
