Fit Meals Monday

Right now I’m sitting on my couch as I count down the minutes to go over our friends home for a Super Bowl Party!  I just love spending time with friends.  I’m also a foodie, so I’m excited to see what good food they are going to have.  My contribution to the party is a Warm Bacon Spinach Salad.  I tried to follow a recipe online, but I didn’t end up liking the dressing.  So, I improvised.  I added a little bit of this, and a little bit of that until I had the perfect taste.

This week I’ll be getting in shape more.  On Tuesday I’ll be officially heading to Manhattan Beach to start training for my 2011 pro beach volleyball season.  I still have my tennis elbow issue going on, so I’m going to try and be smart with my training.  I am SOOOOOOOOO not in playing shape, so I expect this week to be extremely sore, and extremely tired.  Some of the women on our tour never stop playing.  Others started last month.  The old folks like me usually start in February.  I’ll keep you updated on my progress.

Here’s my menu for the week.

hubby begged me to put this on the menu again, so here it is!

Tuesday- Tangy Beef Stroganof

Wednesday- Red Bell Pepper Avocado Salad, greens, and Oven Country Steak which was from my once a month cooking day.  We didn’t end up having this last week because I FORGOT to take it out of the freezer.  So we’ll have it this week.

Thursday- Chicken Caesar Salad

Friday- My husband and I haven’t had a chance to properly celebrate our anniversary (which was months ago!!!) So, we will spend the entire day out doing some fun things, including eating OUT!!! Yay!

Simple Saturday-  Tortilla Soup and Salad.  For this meal I’ll use the left over rotisserie chicken to make this simple soup which I’ve adapted this  Whole Foods recipe.

Sunday- My mom is in town, and we LOVE her cooking!  I think I’ll ask her to make us a special down home “Sunday Dinner”.  My hubby is going to be a guest preacher at a church Sunday, so that will be a great treat to add to the treat of me getting to hear him speak!  Whoo hoo!!!
