Fit Meals Monday

Happy Monday!

I hope your week last week was fantastic!  I had a pretty busy week.  I had some deadlines to meet, but I made it through.  My reward for all my hard work was a trip to Big Bear for the weekend to scrapbook with 17 wonderful ladies at a great Bed and Breakfast called Apples!  We scraped until the wee hours of the morning, ate yummy food, and watched about 20 chick flicks.  I’m not a chick flick fan.  I’m a shoot ’em up, adventure, action, even science fiction sort of gal, but I still had a ton of fun!

Homemade veggie quiche, honey ham, homemade granola with peaches and cream, raisin bran muffin, strawberry soup, and a raisin white chocolate chip scone!

The owners at Apples Bed and Breakfast are very kind.  I was so excited that they made special accommodations for some ladies in our group who are on a detox diet.  The wonderful staff provided them with gluten free, dairy free, and sugar free food that was just as yummy!  Take a look at the yummy breakfast they served!

Here’s my menu for the week.

Meatless Monday- Broccoli Cauliflower Bake This was one of the meals I cooked for the Once A Month Cooking Day.

Taco Tuesday- Healthy Mexican Pizza This is one of my families FAVORITE meals!  It was introduced to us by a guest blogger Kasey Lopez at She shared this recipe with us!  Kasey is a full time registered dietitian.

Slow Cooker Wednesday- Chicken Shepherds Pie This is another one of my Once a Month Mom freezer meals that’s sitting in the freezer waiting to be devoured!

Thursday- Spiced Honey Lemon Chicken, baked beans, sweet corn

Friday- Baked Tilapia, asparagus, spinach salad

Saturday- Leftovers

Sunday- ???  I’ll add this to my menu once I see what’s on sale at the store.

    The broccoli cauliflower bake was AMAZING! The entire family LOVED it! It tasted like lasagna. My hubby said he didn’t miss the meat or the pasta! Everyone had seconds. (My hubby usually doesn’t even like cauliflower).
