Fit Meals Monday

Happy Monday!

To kick off last week, we had a HUGE surprise!  We had SNOW in Southern California!  I do not live in the mountains either.  It never snows here!  Maybe a few times a century in my city! The kids loved it!  It only lasted a day, but it was beautiful to see.  Click this link to see Mya in Valencia Snow

On Monday we resumed our homeschool schedule.  At first, I’ll admit, I wasn’t very excited.  I really felt like I needed another week off.  But, once we got into the groove of things we had a blast!  There’s nothing more exciting than watching the light bulbs go off in their brains.  To see them get the things that were tough for them a month ago is priceless.  I think that’s why I had so much fun!

Besides having a great time at school we also had a fun field trip.  We went to the “happiest place on Earth” Disneyland and Disney’s California Adventure!  We had fun on the fastest rides there, and our family’s favorite was California Adventure’s Animation studio where we learned how to draw Dale the chipmunk!  Each of us came home with our own Dale drawing.

Do you like my hat?  My husband’s cousin made it for me!  It’s Kermit the Frog!  I’ll be giving away a hat on my site for kids and grownups soon! Here’s my menu for the week.

Meatless Monday- Crustless Vegetable Quiche (recipe will be in tomorrow’s post) adapted from The Formula a diet/exercise book I highly recommend.  I loved this meal plan!  It’s based on the 40/30/30 principle which is eating balanced meals, for every meal!

Taco Tuesday- Annett’s Turkey Taco Dip served on a bed of lettuce

Wednesday- Pulled Pork Sandwiches and Cole Slaw

Thursday- Grilled Chicken, Broccoli, baked beans

Fish Friday- Baked Halibut, sweet corn, Weight Watchers garlic mashed red potatoes (I will roast my garlic for this side which is different from this recipe)

Simple Saturday- Lean Beef and Broccoli Stir Fry

Sunday- Keep your fingers crossed that I will be able to my Once A Month Cooking day!!! My freezer will be completely cleaned out by then so it’ll be ready!!

My drink of choice with EVERY meal of the day, except breakfast is water!!! My personal goal is to drink 80 oz per day.

    FYI I used a slow cooker for my Pulled Pork…they are actually leftovers a party that I froze for a busy day!
