Fit Meals Monday

I’m so excited to finally be back home!  It was a busy week.  It felt like a whirlwind.  We drove to Arizona for the 2010 Arizona Ironman which my husband participate in on November 21st.  Then we drove to Las Vegas and had a fabulous time with my in-laws.  We had a blast!  We saw took the kiddos to see Tangled and Megamind.  We loved them both!  Though my son knocked off a few points from Tangled’s perfect 10 to a 8 3/4.  He knocked off points for too much singing, an attempted kiss, and a totally landed kiss (adding a yuck to that).  Little boys are so funny!

For Thanksgiving we had a delicious meal, though I can tell you right now that there wasn’t one thing on the menu that was healthy, except for the turkey.   My MIL planned the meal which included baked turkey, collard greens, sweet potatoes, mac and cheese (3 cheeses yum), green beans, and homemade cornbread dressing.  For dessert we had pretzel salad, and peach cobbler.  It was a glorious day of eating.  I know this is a “fitness” blog, and I should be telling you all to eat everything healthy on holidays…but you know what I need to be honest with you, I enjoy a down home meal every once in a while.  I believe if I take care of myself 360ish days a year, I can eat whatever I want about 5 days a year or so.  :)  That being said, I am NOT a food natzi, and hope you too can enjoy some food like your grandma used to make it once in a while without the guilt.  Just make sure you workout, and eat well the other 360ish days a year.  :)

Now…on to the menu.. For those of you that are new to Fit Meals Monday click here.  This week I’m trying to use up the stuff in my freezer/pantry because I plan on doing a Once A Month Cooking Day next week.

Here’s my menu for the week.

Meatless Monday-  Breakfast for Dinner… Berry Baked French Toast (from my Once a Month Cooking Day)

Tuesday- Sunday leftovers… Baked chicken, mac and cheese, real healthy green bean casserole with fresh crimini mushrooms (I know it sounds like Thanksgiving…well it is, sort of.. I didn’t cook on Thanksgiving.. I LOVE to cook… so this was my chance to

Slow Cooker Wednesday- Veggie Soup.. (corn, celery, white kidney beans,

tomatoes, carrots, mushrooms, onion, and any other veggies in my fridge.  I’ll throw it all into a pot with some veggie broth and tomato sauce)

Fish Thursday- Salmon patties with greens and baked sweet potato fries!

Friday- I’ll be at my sister’s helping her prep for her son’s birthday party.

Simple Saturday-  I’ll be at my sister’s for my nephew’s birthday party!!

Soup and Sandwich Sunday- French Dip Sandwiches (also from my OAMC day)

    So it’s Tuesday and my meal plan has already changed! Silly me… I forgot that Tuesday was our anniversary.. we can’t eat LEFTOVERS on our anniversary! So, I made my hubby’s favorite…Spaghetti Carbonara and got him his favorite red velvet cake! 14 years and counting…
